Custom orders increasingly come with dietary requirements. Colorants are a small ingredient with outsized potential to breach them.
Carmine is the big one
Carmine (also cochineal extract, carminic acid, sometimes Natural Red 4) is derived from insects. It appears in some red and pink colorants, and it means a product is:
- Not vegan
- Not acceptable for some religious dietary requirements
- A recognized allergen for a small number of people, occasionally seriously
If a customer specifies vegan, carmine is the first thing to check for.
Other things to verify
- Gluten: most colorants are gluten free, but carriers and anti-caking agents are worth confirming for celiac customers
- Dairy and soy: uncommon in colors but possible in some carriers and emulsifiers
- Kosher and halal: only meaningful with certification from a named body, the absence of animal ingredients is not the same as certification
- Glycerine: can be plant or animal derived; if it matters, ask the manufacturer
Cross-contamination is the real risk
Your colorant may be compliant while your process is not. A dedicated vegan cake made with a shared spatula that just came out of a buttercream bowl is not vegan.
- Use clean tools for allergen-sensitive orders
- Watch shared containers of sprinkles and decorations
- Be careful with piping bags and tips
- Consider dedicated equipment for frequent allergen work
How to answer customers
Precision protects everyone.
- Say what you know: "This colorant contains no animal-derived ingredients, here is the ingredient statement."
- Say what you cannot guarantee: "My kitchen also handles dairy and nuts, so I cannot guarantee zero cross-contact."
- Never guess. For a severe allergy the consequences of a wrong answer are serious.
Customers with dietary requirements are used to vague answers. A baker who can produce the actual ingredient statement earns loyalty quickly.
Keep records
Maintain a folder of ingredient statements and any certifications for everything you use. It takes an afternoon to build and makes every future conversation straightforward.
