Coloring batter seems simple until you cut into a cake and find pale streaks running through it, or a color that baked out to a fraction of what you mixed.
Color at the right stage
Add color after the wet ingredients are combined but before the flour goes in. At that point the batter is fluid and takes color easily. Once flour is in, every extra stir develops gluten, so you are choosing between even color and tender crumb.
Mix thoroughly but briefly
Scrape the bottom and sides, unmixed color hides there and shows up as streaks. Fold deliberately rather than stirring in circles, which tends to move the top without reaching the base.
Account for baking
Color almost always bakes lighter. Heat degrades some pigments, and browning of the crumb mutes the shade. Mix your batter a shade or two deeper than the finished look you want.
Some colors survive better than others:
- Holds well: blue, purple, green, black
- Fades noticeably: red, pink, some yellows
Red is the classic disappointment, a vivid red batter often bakes to a muted brick. That is why red velvet recipes use so much color and why cocoa is kept low.
Do not thin your batter
Reaching a deep shade with weak color means adding a lot of liquid, which changes the ratio and gives you a flatter, denser bake. Concentrated color avoids the problem. You get intensity from a few drops without altering the recipe.
For rainbow layers
- Make one large batch of batter
- Weigh it, then divide by the number of layers so each is identical
- Color each portion separately
- Bake together where possible so bake times match
Weighing rather than eyeballing is what gives you even layer heights.
Marble effect
Dollop two or three colored batters into the tin alternately, then draw a knife through once or twice only. Over-swirling turns a marble into a uniform muddy color, the single most common mistake.
