How to Fix Streaky Buttercream

You colored the buttercream, it looked even in the bowl, and now there are pale streaks running through your piped border. Here is the diagnostic.

Cause 1: unmixed color hiding in the bowl

The most common by far. Color clings to the sides and bottom where the beater does not reach. It looks mixed, then a streak of concentrated color emerges through your piping tip.

Fix: stop the mixer, scrape the bowl thoroughly, sides, bottom and the beater itself, then mix again briefly. Do this at least twice for deep shades.

Cause 2: too much air

Whipping on high creates fine bubbles that scatter light. The frosting looks paler and patchier than it is.

Fix: mix color in on low. To remove air already there, paddle the buttercream by hand, press it firmly against the side of the bowl with a spatula for a few minutes. This is also how you get glass-smooth cake sides.

Cause 3: temperature inconsistency

If part of your buttercream is colder than the rest, it will not blend evenly and you get marbling.

Fix: bring everything to a uniform room temperature before coloring. Never color straight from the fridge.

Cause 4: color that will not disperse

Some colors sit as droplets in the fat rather than dispersing, especially when you add a lot at once to reach a deep shade.

Fix: add color gradually in smaller amounts, mixing fully between additions, rather than one large dose at the end. A color designed to disperse into fat blends far more readily than one fighting the medium.

Fixing a streaky batch you have already made

  1. Return it all to the mixer
  2. Mix on low for a minute
  3. Scrape thoroughly
  4. Paddle by hand against the bowl
  5. Rest, covered, for an hour, resting evens color out on its own

  • Color before you get to piping consistency, so there is time to correct
  • Always mix on low
  • Scrape more often than feels necessary
  • Rest before use
