How to Store Food Coloring So It Lasts

Food coloring is one of the longest-lasting items in a baking pantry, but poor storage causes separation, thickening and color drift, which quietly ruins your ability to match shades between bakes.

The three enemies

  • Light: the biggest cause of fading. UV breaks down pigment over time.
  • Heat: accelerates degradation and can affect the carrier.
  • Air: dries product around the nozzle and can alter consistency.

Practical storage

  1. Store in a cool, dark cupboard, not on an open shelf above the oven
  2. Keep bottles upright so the nozzle stays clear
  3. Cap tightly straight after use
  4. Wipe the neck before capping to stop it gluing shut
  5. Keep away from the dishwasher and kettle, where heat and steam collect

Should it go in the fridge?

Generally no. Refrigeration is unnecessary and causes condensation each time you take it out, the last thing you want near an oil-based product intended for chocolate. A stable, cool cupboard is better.

Separation is normal

Some settling over time is expected, particularly with concentrated color. Shake or roll the bottle before use. If it stays separated or the texture has clearly changed, the product is past its best.

When to replace

  • The color no longer disperses evenly and leaves specks
  • The shade has visibly shifted from what it used to give
  • There is any off smell
  • It has thickened to the point of being hard to dispense

Keeping colors consistent

If you match colors for clients, buy the size you will realistically use in a reasonable timeframe rather than the largest bottle available. A fresh bottle stored well gives you far more reliable matching than an old one that has been through a year of light and heat.

Labelling

Note the date opened on the bottle. When a shade suddenly stops behaving the way your notes say it should, age is usually the reason.
