Tiers made on different days must match exactly. Record drops per weight of frosting rather than working by eye, and where possible color one large batch and divide it.

Deep colors on a large surface

Reaching a deep shade over the amount of frosting a tiered cake requires means a lot of pigment. With water-based color that is a lot of added liquid, and buttercream that will not hold sharp edges in a warm venue. Oil-based color reaches saturation without softening the structure, which matters when the cake sits out for hours.

Photography

Venue lighting shifts color. Warm tungsten pushes everything yellow. Check the shade under lighting similar to the venue before you commit.

  • Make a test tier and photograph it
  • Get sign-off on a physical sample, not a screen
  • Build in development time, color deep shades days ahead
