You melt your chocolate perfectly. You add a few drops of color. Within seconds the glossy pool turns thick, dull and grainy, like wet sand. That is seizing, and it is one of the most common and most preventable disasters in decorating.
What is actually happening
Melted chocolate is a suspension of sugar and cocoa solids in cocoa butter. It contains almost no water. Sugar is highly attracted to water, so when even a small amount is introduced, the sugar particles grab it and glue themselves together. The smooth suspension collapses into a gritty paste.
It takes surprisingly little. A fraction of a teaspoon of water-based gel can seize an entire bowl.
The three usual culprits
- Water-based coloring: gels and liquids are mostly water or glycerine
- A wet bowl or spatula: a few stray droplets are enough
- Steam from a double boiler: condensation dripping back into the bowl
How to color chocolate properly
Use an oil-based color. Because it is fat-soluble, it blends into the cocoa butter instead of fighting it, the chocolate stays fluid and glossy.
- Melt gently and keep the temperature moderate
- Dry every tool completely
- Add color a few drops at a time, stirring fully between additions
- Let the color develop before judging the shade
Can you rescue seized chocolate?
Not back to a coating consistency. Once the structure breaks, it will not return to a smooth, temper-ready state. But it is not waste: stir in more warm cream and you have ganache, a hot chocolate base, a brownie addition or a truffle filling.
The realistic rule is prevention. Keep water away from chocolate, and color it with something designed to live in fat.
A note on white chocolate
White chocolate is even more sensitive. It has a higher sugar content and scorches at a lower temperature. It also shows color beautifully, which makes it worth the care. Melt low and slow, and color with oil-based only.
